Bubba’s Texas Burger Shack has been serving Houston’s finest Buffalo burgers for over 30 years. Buffalo has grown in popularity in recent years as more and more people have become aware of its benefits. Buffalo are generally grass-fed and they do not need hormone or antibiotic treatments to stay healthy. Buffalo meat is also naturally lean and low in cholesterol.

Little Shack – Big Flavor
Bubba’s Texas Burger Shack is not just a catchy name. We really are just a little shack nestled under the Westpark Tollway, which now offers our customers covered parking. Our little shack is actually older than we are. It was originally a key shop on Westheimer Road before the original owner, Bubba Gilliam, brought it over to Westpark Drive and decided to start selling beer and Buffalo Burgers out of it in 1985. In 1990, Bubba’s was purchased by its current owner, Richard Reed, who had been a loyal customer and burger lover. Richard worked for one of the oil companies in town, and he couldn’t stand the thought of his favorite burger shack disappearing. He originally purchased Bubba’s as a side-venture, but when unforseen circumstances caused Richard to retire from the oil industry, Bubba’s became his full-time occupation. Richard can still be found poking his head in every now and then, but his daughters Erin and Allison try to keep him at home to enjoy the fruits of his labor. Matthew McCracken joined the team about 7 years ago, and has been like a little brother. Erin, Allison, and Matthew now handle the day-to-day operations, and their faces are the ones you are most likely to see behind the register or on the grill. They are also busy raising the future owners of Bubba’s Texas Burger Shack, their beautiful children Madison, Owen, Jackson, Abigail, and Jude.

Many things have changed since Bubba’s was first opened in 1985, but the one thing that has remained constant has been the admiration and support of its loyal customers. Bubba’s Texas Burger Shack is the only business to remain on this stretch of Westpark Dr. and that is due in large part to our excellent customers. During the construction of the Westpark Tollway, the only way for people to get to Bubba’s was to hop the curb at Rice and drive through an empty lot and the construction site to get to us, because the road was completely shut down. Thankfully the local news stations and word of mouth got the message out, and enough people went out of their way to keep us going until construction ended. Years later, our little shack was somehow spared the wrath of Hurricane Ike (probably because it is literally surrounded by freeways) and we were able to open our doors to the public when so many were without power. It is this mixture of good will and good luck that has enabled us to secure a spot in the patchwork fabric of this city’s heart, and for that we are eternally grateful. People always tell us “I’ve driven by this place for years, and I finally decided to stop in.” The next time you drive by the funky little shack on Westpark, stop on in for a little taste of Texas – you won’t be disappointed that you did!
